PORK LOIN ROAST RECIPE INGREDIENTS

* 1 (4 pound) boneless pork roast
* 1 cup applesauce
* 1/3 cup packed brown sugar
* 2 teaspoons vinegar
* 1 teaspoon yellow mustard
* 1/8 teaspoon ground cloves
* 1 tablespoon flour
* 1/2 teaspoon salt
* 1/4 teaspoon sugar
* 1/8 teaspoon garlic powder
* 1/8 teaspoon ground black pepper

PORK LOIN ROAST RECIPE INSTRUCTIONS

1. Heat oven to 350 degrees F. Stir together applesauce, brown sugar, vinegar, mustard and cloves in small bowl; refrigerate half of the applesauce mixture and set aside remaining applesauce mixture. Combine flour, salt, sugar, garlic powder and pepper in another small bowl.
2. Rub flour mixture evenly over entire surface of pork. Place pork on rack in shallow roasting pan. Roast, uncovered, until internal temperature is 140 degrees F. Spoon reserved applesauce mixture over roast. Roast until internal temperature is 155 degrees F., 1 to 1 1/2 hours total cooking time (about 18-20 minutes per pound). Transfer roast to serving platter; cover with foil and let stand for 15 minutes before slicing. Heat chilled applesauce mixture in small saucepan until boiling; boil for 1 minute. Spoon heated applesauce mixture over pork slices. Great tasting pork loin roast recipe is ready for feasts......nice one !

STANDING PORK LOIN ROAST

Pork Loin Roast Recipe Ingredients:
  • 1 bone-in pork loin (2.5 lbs - 5 lbs)
  • garlic cloves, slightly pressed
  • 1 cup flour
  • 1/2 cup Tones Canadian Steak Seasoning
  • 1/4 cup Durkee Steak Dust
  • 1/4 cup Durkee Grill Seasoning
  • couple grinds of fresh pepper
  • olive oil

Pork Loin Roast Recipe Instructions:
Set oven rack one below middle and then preheat to 500°F. Rinse off roast with cold water and pat dry.
Pierce roast all around 1/2" or so and stuff with slightly pressed garlic cloves.

Cooks Note: In the Cooks.com Test Kitchen, we use a sharp paring knife and make small X's in the meat to insert garlic, strips of salt pork and sprigs of fresh herbs.

Brush whole roast with olive oil and set aside. Mix all other ingredients in a Freezer bag or one large enough to hold roast. Put roast in bag and shake until covered well, pressing the seasons into the roast. Take a shallow baking pan and cover with foil. Place a rack in the pan to keep the roast off the pan fat side up. Roast at 500°F for 20 minutes then reduce oven temperature to 250°F.

Set timer for 1 1/2 hour. Check roast with meat thermometer; it should read around 150°F. When internal temperature reaches 160°F, remove roast from oven and allow to rest for 20 minutes; then carve.

Pork Loin Roast Recipe Ingredients :
  • 4 to 6 lb. boneless pork loin roast (double)
  • 4 med. potatoes
  • 6 to 7 ribs celery, cut diagonally into 2 doz. 3-inch pieces
  • 1/2 c. water
  • 1/4 tsp. dill weed
  • 1/4 tsp. salt
Pork Loin Roast Recipe Instructions:
Trim excess fat from roast. Place roast on rack in an open roasting pan. Insert meat thermometer so the bulb is centered in thickest part. Do not add water. Do not cover. Roast in slow oven (325 degrees) for 1 hour.
Meanwhile, pare potatoes and place on rack around roast. Continue cooking, uncovered, until roast reaches an internal temperature of 170 degrees (allow 30 to 35 minutes per pound), turning potatoes occasionally. Remove roast and cover with foil. Remove 2 teaspoons drippings to large frying-pan. Turn temperature up to 375 degrees.

Cover pan and continue cooking potatoes 20 minutes, turning once or twice. Meanwhile add celery, water, dill weed and salt to drippings in frying-pan; cover tightly and cook slowly 12 to 15 minutes or until celery is tender-crisp. Carve roast and serve on warm platter with potatoes and celery.
