Place roast on rack in an open roasting pan. Insert meat thermometer so the bulb is centered in thickest part. Do not add water. Do not cover. Roast in slow oven (325 degrees) for 1 hour.&lt;/div&gt;&lt;div&gt;Meanwhile, pare potatoes and place on rack around roast. Rub with cut garlic. Combine herbs, pepper and salt. Press mixture all over roast. Wrap tightly in plastic wrap and refrigerate overnight.&lt;/div&gt;&lt;div&gt;Heat oven to 400°F. Process to make 2 cups of puree. Blend 1 cup of the puree with 1 tablespoon of lemon juice. Refrigerate.&lt;br /&gt;Combine remaining peach puree with the remaining lemon juice, soy sauce, honey, minced garlic, ginger, and pepper.
